Mini Tomato and Feta Omelettes

These mini omelettes are the perfect shape and size for toddler fingers.

Ingredients

  • Melted butter, for greasing

  • 4 eggs, beaten

  • 2 tbsp chopped chives

  • 3 sun-dried tomatoes, finely sliced

  • 75g feta cheese, crumbled

  • salt and black pepper

Quick snack for your toddler or cute canapé for your drinks party – these mini omelettes will cover both bases...

  1. Brush a 12-hole mini muffin tray lightly with melted butter to grease.

  2. Mix together all the remaining ingredients in a large bowl until just combined.

  3. Pour the mixture into the greased holes and place in a preheated oven on 220°C/gas mark 7, for about 10 minutes until golden and puffed up.

  4. Remove from the oven and serve warm.
