Mash up pieces of avocado with a fork and give to your baby. You could also blend the chicken and avocado until smooth.

Serve your toddler pieces of sliced chicken and cucumber sticks.
Ingredients

For the salad:

50g watercress
-
50g cucumber, cut into long matchsticks

30g red and white quinoa
-
½ avocado, chopped
-
Handful of sun-dried tomatoes
-
50g pre-roasted chicken, sliced

Handful of fresh coriander leaves

For the dressing, mix:
-
1 tbsp extra virgin olive oil
-
1 tsp balsamic vinegar
-
Pinch of salt and pepper

Cover the quinoa with cold water and bring to the boil, then simmer for 15 minutes. Top up with water if it looks like it's getting a bit dry. Drain.

Place the quinoa on a plate and sprinkle with the watercress, cucumber, avocado, sun-dried tomatoes and top with the chicken slices.

Sprinkle the chopped coriander over the top.

Mix the dressing ingredients and serve on the side.
Vegetarian alternative: Replace the chicken with 50g firm goats’cheese. If you're pregnant, use mozzarella or feta.
